严要求，严把关。原材料进货，东主仲毅仲先生采取自主进货的方式，坚持每天亲自到市场选购，放弃了传统的送货上门，择优而用。性格直爽的东北人这样说：“这样做虽辛苦劳累些，却能切实保证蔬菜的新鲜、优质，能多给顾客一分健康，累也值得。”；后厨管理上，美味轩的师傅们，不穿制服绝不进厨房，仲先生自己也是一样。为保证菜品味道一直不变，仲先生大胆采用标准化菜谱，按菜谱制菜，将复杂的烹调工艺程序化，把厨师变成了厨工，将厨房工作变成了有据可依的标准劳动，简化了程序，提高了效率。大到招牌菜——麻婆豆腐、清蒸活鱼（需提前预定），小到炸酱面、锅贴、水饺等的制作，称要分量，核对比例，细致入微，精益求精。

 

重造型，少汤汁。美味轩的堂吃，不仅味美色鲜，装盘也是相当讲究。雕花刻鸟，栩栩如生，嵌入餐盘，精致美观，胃口大开，为尊贵的客人提供艺术化的美食享受。少汤汁，说的是外卖。鸡片鸡丁青菜等原材料一一过水、沥干，少油制作却绝对够味。芡粉浓度的控制，更是与众不同，宁稠勿稀，以防止汤汁外漏现象的发生；牛肉过油后，用水冲洗再次烹调，既保留了肉的鲜香嫩滑，保证了营养健康，又不会让顾客因油腻过度望而却步。

On the menu there is a notice, “Anyone who has dietary concerns or food allergies should speak to the manager to inform her of their requirements.” The head chef, Alex himself, will accommodate a customer by preparing off-menu items.
